This Girl is on the Move

In just shy of two weeks I’m moving.. This is the catalyst of change I mentioned… J isn’t moving with us. It is to be just me and the kidlet and… its a little intimidating to think about.

Get this folks… I have to start cooking :-0! Are you as scared by that as I am? I am freaked out. FREAKED OUT!!!

So now I turn to you and ask a favor… I know you all have one simple.. delicious recipe to share right? So come on… make with the sharing! 🙂

  10. Mexican tortilla soup! 2 cans beef broth, 1 can black beans, 1 can corn, 2 cups chunky salsa, 1 lb ground beef, shredded cheddar/mexican style cheese, tortilla chips
    Combine all except cheese and chips, bring to boil, then simmer for 5 minutes. Top with cheese and crumbled chips. More of a wintertime meal. But it is even better reheated!

    • <3 you have stolen my heart with this one..if I wasn't living off ramen for the next two weeks I would be at the store in 5 minutes getting the stuff for this. My absolute favorite meal...EVER hungy lol

  11. Lazy woman’s single serving spaghetti: one small-ish rectangular microwavable dish, spaghetti, and whatever sauce or dressing you want

    grab enough spaghetti to make about a dime size when held in a fist. break it in half. Put it in the dish and just cover the spaghetti with water.

    Stick it in the microwave for 15 minutes, occasionally opening the door to stir the spaghetti to keep it from sticking.

    after 15 minutes not much water will be left, but drain off what there is.

    sauce is up to you. I usually just go with butter, cheese and ranch, myself, and that’s the way my boy prefers it now. he won’t even eat spaghetti sauce, lol.

    if you use spaghetti sauce with no meat…it’s fat free, though far from carb free.
