This recipe was just kind of made up on Friday night. Hubby is good about this kind of throw it together and it’s awesomely delicous recipe. One of the hundreds of reasons I keep him around.
It’s Spanish Style Chicken and Rice and you will need:
13×9 casserole dish with cover/lid
Mahatma (or your favorite) Spanish Rice – 1 pkg. 5 oz uncooked
1/4 large white onion diced
1/2 – whole tomato (to taste) diced
1/3 cup favorite salsa
1/2 cheese (mexican style is what we use)
1 2/3 cup water
pepper to taste
Cook time:
Oven 1 hour @ 350 degrees

You have to smell this as it cooks, once you’ve done that you’ll realize how good this recipe is and how quickly it will become a family favorite. It’s Sunday as I write this, I went to the store just for these ingredients so that he would make it again.
He took the hint well. Nothing can make a house smell better than cooking delicious food.
Do yourself a favor and make this recipe, it’s perfect for a Saturday afternoon or a one dish dinner on Sunday evening.
